This time, I went back to "Senryo Shokudo Uokichi" in Imorimachi, Isahaya City, Nagasaki Prefecture!

"This is a restaurant I want to eat at again this year! So I went to
Uokichi, the fresh fish restaurant! I highly recommend the Unzen
Nibosaba (Unzen mackerel) that I was looking for! It was incredibly
fresh! The oil was also super bouncy and delicious! It was delicious 😆"
Our target this time is the recently popular "Unzen Nibosaba!"
I saw this restaurant introduced on Instagram, and as a child
I was blown away by eating sesame mackerel in Fukuoka and Seki mackerel
in Oita, and as someone who loves mackerel, I absolutely had to try
this, so I decided to visit!
What is "Unzen Nibosaba"?
"Unzen Nibosaba" is a brand of mackerel that is raised in Tachibana Bay in Unzen City, Nagasaki Prefecture, and is fed dried sardines .
The fish are raised by Tenyomaru Co. , Ltd. , a fishing company in Unzen City , and are made by making effective use of dried anchovies (non-standard products), a local specialty.
The main features and attractions are as follows:
1. Delicious because they are raised on dried sardines
Usually,
farmed fish are fed compound feed, but Nibosaba is fed with dried
sardines that are produced when processing anchovies caught in-house.
Strong umami flavor: The ingredients of the dried sardines are reflected in the flesh, and the deeper the flavor the more you chew it.
No odor: Because they are raised on a diet of natural dried sardines, they have almost no odor that is typical of farmed fish.
Refined fat: Although it is fatty, it has a light aftertaste and is easy to eat.
2. Thorough freshness management
The
fish is bled immediately after being caught and the gills and internal
organs are quickly removed to completely eliminate the fishy smell. For
this reason, it is best eaten as sashimi or "shimesaba."
3. Recommended way to eat it
Marinated mackerel:
This is the most popular way to eat it. There are also sets available
for comparing different levels of marinated mackerel, such as rare,
medium, and well-done.
Pickled rice bowl/chazuke: "Nibosaba Chazuke" is marinated in a sauce made with local soy sauce and citrus (orange) and is delicious just served on rice.
Sashimi: Because it is vacuum packed in a fresh state, it can be enjoyed as sashimi immediately after thawing.
4. Where can I buy it?
Online shop: Available for purchase at the official Tenyomaru store .
Hometown tax donation: It is also very popular as a return gift from Unzen City, Nagasaki Prefecture.
Locally: It is served and sold at hot spring inns, restaurants, and direct sales outlets in Unzen City.
Not
only is it a unique fish, with the mackerel having been raised on a
diet of dried sardines, but it is also attracting attention from the
perspective of the SDGs (utilizing unused fish), making it a
next-generation brand fish representing Unzen, Nagasaki.

The mackerel was super tasty, the fried horse mackerel was
super crispy, and the tartar sauce wasn't too mayonnaise-y and had
plenty of egg in it, making it absolutely delicious!!
