In Dozamachi, Nagasaki City, there is a famous restaurant
called "Nogi Chukasoba" that is frequented by all Nagasaki ramen fans!
The ramen is so popular that people are willing to line up
and sign their names, which only heightens expectations for the ramen.
This time, my wife and I went there together and compared the
salt ramen and soy sauce ramen, both of which are renowned as some of
the best in Nagasaki, and we even thoroughly enjoyed the carefully
prepared "Today's Meal"!

It also seems that some people write down their dates and then go sightseeing nearby until the time arrives.

This time, I ordered salted Chinese noodles for 850 yen and today's rice for 150 yen.
My wife ordered soy sauce ramen noodles for 850 yen.
The first thing that will surprise you when you enter the restaurant is that the chef is the only one working there.
From showing customers to their seats to cooking, serving and
clearing away, the streamlined and refined movements are like watching
the craftsmanship of a traditional Japanese restaurant!
I'd love for people overseas to see this too!
The chef's dedication to his customers is clear, yet his
sincerity towards them makes for moving entertainment even before you
eat.
The condiments are, from left to right, chili pepper, soy
sauce, dashi vinegar (dashi with dried sardines), and pepper.
This dashi vinegar was extremely effective in adding a different flavor to the dish later on!
The soy sauce is also delicious!
This soy sauce goes perfectly with today's meal, egg rice!

There are two types of pork slices, one rich and one light, and they are also grilled which is great!
The oil from the grilled meat was also added, which added a nice accent!
The seaweed on the salted Chinese noodles was also great!

You can make a single sheet of nori seaweed!
I would love to have this seaweed wrapped around rice!!

In fact, I wanted to eat two bowls (lol).
In addition to the impressive W Chinese Noodles, which were
both equally delicious, the food at Nogi Chinese Noodles impressed me, a
self-proclaimed "rice enthusiast"!
